Whole 30 Breakfast Hash with Bacon
Ingredients
- 8 slices Whole 30 compliant bacon, chopped
- 6 cups Yukon gold potatoes, diced
- 1 tsp salt
- 1 tsp pepper
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup fresh spinach
- 2 green onions, sliced
Instructions
- Heat a large skillet over medium-high heat. Add chopped bacon. Once cooked and crispy, remove from pan and place on a paper towel lined plate.
- Add diced potatoes to pan in even layer and cook while stirring for 10 minutes. Cover and continue to cook for 5 additional minutes or until potatoes are cooked through.
- Remove potatoes and set aside. Add onions and bell peppers to pan and more oil if necessary. Continue to cook while stirring for 5-6 minutes or until vegetables are soft.
- Add cooked potatoes and bacon back to pan and mix. Add spinach and cook for addtional 2-3 minutes while mixing. Add chopped green onions and serve.
