Heat a large skillet over medium-high heat. Add chopped bacon. Once cooked and crispy, remove from pan and place on a paper towel lined plate.
Add diced potatoes to pan in even layer and cook while stirring for 10 minutes. Cover and continue to cook for 5 additional minutes or until potatoes are cooked through.
Remove potatoes and set aside. Add onions and bell peppers to pan and more oil if necessary. Continue to cook while stirring for 5-6 minutes or until vegetables are soft.
Add cooked potatoes and bacon back to pan and mix. Add spinach and cook for addtional 2-3 minutes while mixing. Add chopped green onions and serve.
