Bright and fresh, this healthy and light Tomato, Cucumber, and Avocado Salad is a great side to any dish.
This Tomato, Cucumber, and Avocado Salad which is Whole 30 of course has to be one of my favorite side dishes ever. As you know I am Romanian and this salad is a staple in every Romanian household especially during the summer. It is usually accompanied by homemade fries and fried eggs or sausage. My dad actually makes it 3-5 times a week not for lunch, but actually for breakfast to go with his fried or hard-boiled eggs. I love this easy fresh salad any time really. It is so incredibly delicious and easy to throw together making it the perfect addition to grilled chicken, sausage, or eggs. I also switch back and forth between using green onion or red onion depending on what I have on hand but both are equally tasty.
Simple ingredients I use to make Tomato, Cucumber, and Avocado Salad (Whole 30, Paleo)
- tomatoes
- cucumbers
- avocado
- onion
- parsley
- vinegar
- olive oil
- salt
- pepper
Tomato, Cucumber, Avocado Salad
Ingredients
- 3 cups cherry tomatoes, halved
- 2 cups persian cucumbers, halved then sliced (4)
- 1 avocado, diced
- 1/2 cup sliced red onion/ or 4 green onions sliced
- 2 tbsp fresh parsley, chopped
- 2 tsbp extra virgin olive oil
- 3 tbsp white wine vinegar
- 1 tsp sea salt
- 1/2 tsp pepper
Instructions
- In medium size bowl combine, tomatoes, cucumbers, avocado, red onion, olive oil, vinegar, salt, and pepper. Gently mix well. Add additional salt and pepper if necessary. Enjoy!
