Tomato, Cucumber, Avocado Salad

Ingredients
  

  • 3 cups cherry tomatoes, halved
  • 2 cups persian cucumbers, halved then sliced (4)
  • 1 avocado, diced
  • 1/2 cup sliced red onion/ or 4 green onions sliced
  • 2 tbsp fresh parsley, chopped
  • 2 tsbp extra virgin olive oil
  • 3 tbsp white wine vinegar
  • 1 tsp sea salt
  • 1/2 tsp pepper

Instructions
 

  • In medium size bowl combine, tomatoes, cucumbers, avocado, red onion, olive oil, vinegar, salt, and pepper. Gently mix well. Add additional salt and pepper if necessary. Enjoy!
