The best thing about this one pot dinner is that it is completely customizable by adding your favorite toppings like avocado, sour cream, salsa, cilantro, and served in your favorite tortillas or on a bed of rice.

  • olive oil
  • chicken breast
  • chili powder
  • paprika
  • oregano
  • garlic powder
  • cumin
  • salt
  • bell peppers
  • yellow onions
  • fresh chopped cilantro

Skillet Chicken Fajitas

A fast and easy dinner option on the busiest of days, these skillet chicken fajitas are both satisfying and full of flavor.

Ingredients
  

  • 2 Tbsp extra-virgin olive oil
  • 2 lbs boneless skinless chicken breasts, sliced thin
  • 1 Tbsp chili powder
  • 2 tsp smoked paprika
  • 2 tsp dry oregano
  • 2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 4 bell peppers sliced (color of your choice)
  • 2 yellow onions, sliced
  • 2 Tbsp fresh chopped cilantro

For Serving

  • salsa
  • limes

Instructions
 

  • In a bowl add chicken, olive oil, chili powder, paprika, oregano, garlic powder, cumin, and salt. Toss to combine.
  • Add a large skillet over high heat. Add chicken and cook while stirring until cooked through (about 9-10 minutes). Remove from skillet.
  • Add remaining 2 Tbsp olive oil to skillet. Add onions and bell peppers to skillet. Cook the onions and bell peppers while stirring until tender (about 5-6 minutes).
  • Add the cooked chicken to onions and peppers and stir to combine. Top with fresh chopped cilantro, and serve on you rfavorite tortillas or on a bed of rice. Enjoy!
