Skillet Chicken Fajitas
A fast and easy dinner option on the busiest of days, these skillet chicken fajitas are both satisfying and full of flavor.
- 2 Tbsp extra-virgin olive oil
- 2 lbs boneless skinless chicken breasts, sliced thin
- 1 Tbsp chili powder
- 2 tsp smoked paprika
- 2 tsp dry oregano
- 2 tsp garlic powder
- 1 tsp cumin
- 1 tsp salt
- 4 bell peppers sliced (color of your choice)
- 2 yellow onions, sliced
- 2 Tbsp fresh chopped cilantro
In a bowl add chicken, olive oil, chili powder, paprika, oregano, garlic powder, cumin, and salt. Toss to combine.
Add a large skillet over high heat. Add chicken and cook while stirring until cooked through (about 9-10 minutes). Remove from skillet.
Add remaining 2 Tbsp olive oil to skillet. Add onions and bell peppers to skillet. Cook the onions and bell peppers while stirring until tender (about 5-6 minutes).
Add the cooked chicken to onions and peppers and stir to combine. Top with fresh chopped cilantro, and serve on you rfavorite tortillas or on a bed of rice. Enjoy!
