This delicious lasagna-skillet has all the flavor of traditional lasagna but lighter, healthier, gluten-free, and higher in protein.
Lasagna is one of my favorite dishes ever. It’s right up there with Jambalaya and enchiladas, but the long process of making it can be daunting. This easy lasagna skillet has all the flavors of traditional lasagna but we use lighter turkey Italian sausage, ground turkey, gluten-free noodles, and cottage cheese to replace the ricotta cheese. It is full of flavor and high in protein. It comes together under 30 minutes and is perfect for a weeknight dinner and fancy enough for a date night in.

- gluten-free Mafalda pasta
- extra-virgin olive oil
- onion,
- garlic
- ground turkey
- turkey Italian sausage
- marinara sauce
- cottage cheese
- Mozzarella cheese
- fresh basil
- Italian Seasoning
Gluten-Free Lasagna Skillet (High -Protein)
Ingredients
- 1 lb Mafalda pasta (gluten-free) *Jovial is a favorite
- 2 Tbsp extra virgin olive oil
- 1 yellow onion, finely diced
- 4 garlic cloves, minced
- 1 lb lean ground turkey (93%)
- 1 lb. ground sweet Italian turkey sausage
- 2 Tbsp Italian Seasoning
- 1 tsp salt
- 1 28 oz jar Marinara sauce (Rao's is a favorite)
- 1 cup lactose-free cottage cheese
- 2 cups low-fat Mozzarella cheese/divided
- fresh basil, chopped (optional
Instructions
- Add pasta to a large pot of boiling water and cook until al dente. Drain and set aside.
- Add oil to large skillet over medium heat. Add onions and saute for 4-5 minutes and then add minced garlic. Stir and cook for 1 more minute.
- Add ground turkey, Italian sausage, and saute while breaking it up with a spoon or until meat is no longer pink. Add Italian Seasoning, salt, and stir.
- Pour Marinara sauce over the meat and mix well. Simmer for about 2-3 minutes.
- In a small bowl mix cottage cheese and 1 cup of Mozzarella cheese.
- Add dollops of cheese mixture and mix in. Top with remainder Mozzarella cheese and cover to cook for 5 more minutes. Serve with fresh basil.
