Gluten-Free Lasagna Skillet (High -Protein)

Ingredients
  

  • 1 lb Mafalda pasta (gluten-free) *Jovial is a favorite
  • 2 Tbsp extra virgin olive oil
  • 1 yellow onion, finely diced
  • 4 garlic cloves, minced
  • 1 lb lean ground turkey (93%)
  • 1 lb. ground sweet Italian turkey sausage
  • 2 Tbsp Italian Seasoning
  • 1 tsp salt
  • 1 28 oz jar Marinara sauce (Rao's is a favorite)
  • 1 cup lactose-free cottage cheese
  • 2 cups low-fat Mozzarella cheese/divided
  • fresh basil, chopped (optional

Instructions
 

  • Add pasta to a large pot of boiling water and cook until al dente. Drain and set aside.
  • Add oil to large skillet over medium heat. Add onions and saute for 4-5 minutes and then add minced garlic. Stir and cook for 1 more minute.
  • Add ground turkey, Italian sausage, and saute while breaking it up with a spoon or until meat is no longer pink. Add Italian Seasoning, salt, and stir.
  • Pour Marinara sauce over the meat and mix well. Simmer for about 2-3 minutes.
  • In a small bowl mix cottage cheese and 1 cup of Mozzarella cheese.
  • Add dollops of cheese mixture and mix in. Top with remainder Mozzarella cheese and cover to cook for 5 more minutes. Serve with fresh basil.
