Sheet Pan Chicken Fajitas (Whole 30, Paleo)

Easy and quick Whole 30/Paleo weeknight meal that is absolutely delicious.

These easy Sheet Pan Chicken Fajitas are so simple to throw together. Perfect for busy weeknights, all you need is boneless, skinless chicken breast, peppers, onions, and some spices. When I am doing a round of Whole 30 I eat them in butter lettuce cups with hot sauce and fresh avocados and are also a great salad topper. If you are not restricted serve them on your favorite tortillas or on a bowl of rice. Top with some fresh chopped cilantro and lime juice. Enjoy!

Simple ingredients I use to make Sheet Pan Chicken Fajitas

  • chili powder
  • cumin
  • garlic powder
  • smoked paprika
  • salt and pepper
  • olive oil
  • chicken breast
  • bell peppers
  • red onion
  • fresh chopped cilantro
  • lime juice

Easy Sheet Pan Chicken Fajitas (Whole 30, Paleo)

Ingredients
  

  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1.5 boneless, skinless chicken breasts, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 red onion, sliced
  • 3 tbsp extra virgin olive oil
  • juice of 2 limes
  • 1/4 cup fresh chopped cilantro

Instructions
 

  • Preheat oven to 425 degrees F, and spray a large rimmed sheet pan with olive oil spray.
  • In a small bowl combine chili powder, cumin, garlic powder, paprika, salt and pepper.
  • Place chicken, bell peppers, and onion in a large mixing bowl. Drizzle olive oil, sprinkle seasoning, and mix well.
  • Pour chicken mixture onto the baking sheet pan and spread evenly.
  • Bake for 20-25 minutes or until chicken is cooked and vegetables are tender. Top with fresh lime juice and fresh chopped cilantro.
  • Serve in your favorite tortillas or lettuce. Enjoy!
