Mexican cauliflower rice is one of my favorite low-carb side dishes. As a lover of Mexican cuisine I make this easy side dish any time I make tacos, enchiladas, or my favorite Turkey Burrito Bowls. Mexican Cauliflower rice comes together in under 20 minutes and is so incredibly flavorful all while totally Whole 30, Paleo, and Vegan. Simple ingredients I use to make Mexican Cauliflower Rice
- onion
- garlic
- cumin
- paprika
- salt
- pepper
- riced cauliflower
- Tomato sauce
- chicken broth
- cilantro
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 medium yellow onion, finely diced
- 2 garlic cloves minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp sea salt
- 1/2 tsp pepper
- 16 oz cauliflower, riced
- 8 oz can tomato sauce
- 1 cup low sodium chicken broth
- 1/4 cup fresh chopped cilantro
Instructions
- Set a large skillet over medium-high heat and add olive oil. Add the onion and cook until soft (about 5 minutes). Add garlic, cumin, paprika, salt, and pepper. Stir and cook for another 1-2 minutes.
- Add the cauliflower rice, tomato sauce, and broth. Cook and stir frequently until the liquid is all gone about 5-10 minutes. Top with fresh cilantro and enjoy!
