Slow Cooker Chicken Meatballs (Paleo, Whole 30)

   

Here you have a lighter version of an old time favorite! Meatballs that are made with lean ground chicken and no breadcrumbs in a simply garlicky tomato sauce, that please even the pickiest of eaters.  Simple to make with seasonings right out of your pantry, this is a great meal to assemble on one of those crazy busy weeknights.  Super great topped with some fresh basil or parsley but I leave it out for my kids.  Give these easy, simple, and flavorful slow cooker chicken meatballs a try and you will be glad you did.

Ingredients:

Sauce:

1 28 oz. crushed tomatoes

1 15 oz. can tomato sauce

1 tsp salt

1 tsp pepper

2 tbs extra virgin oil

4 garlic cloves peeled, and smashed

Meatballs:

1 lb. ground chicken

1 tbs. minced dry onion

1 tbs. dry parsley

2 tsp. salt

1 tsp garlic powder

1 egg

1 tbs. extra virgin olive oil

Directions:

Add the crushed tomatoes, tomato sauce, salt and pepper to the slow cooker.

Pour the oil and smashed garlic cloves in a small pan over medium high heat and cook for 2-3 minutes until garlic is browned and fragrant, and add to the slow cooker.

For the meat balls, mix ground chicken, dry onion, dry parsley, salt, garlic powder, and egg.  Mix well, use a tablespoon measuring spoon and form into 1 inch meatballs.  

Place meatballs in a large pan over medium high heat and sear the meatballs on all sides.

Add seared meatballs to slow cooker, cover and cook on high for 3-4 hours or on low for 6-8 hours. 

Serve over spaghetti squash or your favorite gluten-free pasta.
