Sausage, Sweet Potato, and Kale Soup (Whole 30, Paleo)

Healthy and delicious, this sausage, sweet potato, and kale soup is easy to throw together and also Whole 30, Paleo, and dairy-free.

My father-in-law first introduced me to this soup. I went over for lunch and I was so excited to try it. It was so different than other soups I have tried before because of the contrast of flavor between the spicy sausage and sweetnes of the sweet potato. It reminded me of Olive Garden’s Zuppa Tosacana but not as creamy and the potatoes swapped for sweet potatoes or yams. This Whole 30/ Paleo and dairy-free delicious soup is easy to make, has minimal ingredients and is full of flavor. I like to spice it up by using 1 lb. of hot Italian sausage and 1 lb. of sweet or mild Italian sausage, however if you are sensitive to spice you can just do 2 lbs. of sweet or mild Italian sausage.

  • avocado oil
  • hot Italian sausage
  • sweet Italian sausage
  • onion
  • garlic
  • rosemary
  • sweet potatoes
  • chicken broth
  • kale
  • bay leaves

Sausage, Sweet Potato, and Kale Soup

Ingredients
  

  • 2 tbsp avocado oil (extra-virgin olive oil works great too)
  • 1 lb hot Italian sausage
  • 1 lb sweet Italian sausage
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 medium sweet potatoes, peeled and diced
  • 8 cups chicken broth
  • 2 bay leaves
  • 6 cups fresh kale, chopped (stemps removed)

Instructions
 

  • Set a large soup pot or dutch oven over medium high heat. Add avocado oil, ground sausage, and cook until browned while breaking it up with a wooden spoon.
  • Add onion, garlic, rosemary, paprika, salt, and pepper. Continue to cook until and stir until onions are softened (about 3-5 minutes).
  • Add diced sweet potatoes, chicken broth, and bay leaves. Bring to a boil. Cover and simmer for 15-20 minutes or untill sweet potatoes are tender.
  • Stir in chopped kale and let it cook for about 2-3 minutes. Stir the soup and add any salt and pepper if needed. Enjoy!
