Sausage, Sweet Potato, and Kale Soup

- 2 tbsp avocado oil (extra-virgin olive oil works great too)
- 1 lb hot Italian sausage
- 1 lb sweet Italian sausage
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
- 3 medium sweet potatoes, peeled and diced
- 8 cups chicken broth
- 2 bay leaves
- 6 cups fresh kale, chopped (stemps removed)
Set a large soup pot or dutch oven over medium high heat. Add avocado oil, ground sausage, and cook until browned while breaking it up with a wooden spoon.
Add onion, garlic, rosemary, paprika, salt, and pepper. Continue to cook until and stir until onions are softened (about 3-5 minutes).
Add diced sweet potatoes, chicken broth, and bay leaves. Bring to a boil. Cover and simmer for 15-20 minutes or untill sweet potatoes are tender.
Stir in chopped kale and let it cook for about 2-3 minutes. Stir the soup and add any salt and pepper if needed. Enjoy!
