Tocanita de Cartofi (Romanian Potato Stew with Sausage)

Tocanita de cartofi or Romanian Potato Stew is a super popular traditional Romanian dish so much so that it should be the national food of Romania. It is one of the main stars of Romanian cuisine and although a simple dish, it is incredibly flavorful and such a hearty meal. It can be made and served as a side dish or with added protein such as sausage, chicken, or pork as the main course. I grew up on Romanian traditional food. My mom is literally the queen of Romanian cooking and I absolutely loved everything she made. Traditional dishes from stuffed cabbage rolls (sarmale) to meatball soup (ciorba de perisoare), and of course this famous dish. She’s one of those cooks that doesn’t measure any ingredient and everything comes out so delicious! This Potato Stew or tocana de cartofi is my mom’s recipe and while I was growing up it was served at least every other week. Althought this recipe is served all over the country and has many variations, this version that starts with sauteed veggies and finished with freshly chopped parsley. Fresh herbs is key in finishing the potato stew and although many use dill as the finishing touch in the Transylvania region where my family is from parsley is what is used. We loved to eat ours with a side of pickled cabbage and fresh ground black pepper.

Simple ingredients I use to make Romanian Potato Stew (Tocanita de cartofi cu cirnat)

  • extra virgin olive oil or avocado oil
  • chicken sausage
  • yellow onion
  • bell pepper
  • tomato
  • salt
  • tomato paste
  • paprika
  • potatoes
  • water
  • fresh parsley

Romanian Potato Stew with Sausage (Tocanita de Cartofi cu Cirnat)

Ingredients
  

  • 2 Tbsp olive oil
  • 12 oz chicken sausage, sliced
  • 1 large yellow onion, chopped
  • 1 large red bell pepper, diced
  • 1 Roma tomato, diced
  • 2 tsp salt
  • 1 Tbsp tomato paste
  • 1 Tbsp paprika
  • 2.5 lbs yukon gold potatoes, peeled and cut in 1 inch chunks
  • 1/4 cup fresh parsley, chopped

Instructions
 

  • Add a large pot over medium heat. Add olive oil and sliced sausage. Sear sausage slices for 2-3 minutes or until browned. Using a slotted spoon remove and set aside.
  • Add onion, bell pepper, tomatoes, and salt. Stir and cook for about 4-5 minutes or until vegetables are soft. Add tomato paste and continue to cook while stirring for about 1-2 more minutes. Add potatoes and mix well.
  • Add enough water to cover potatoes. Cook for 20-25 minutes or until potatoes are tender. Add sausage back in and fresh chopped parsley, stir to combine and add additional salt if necessary.
