Add a large pot over medium heat. Add olive oil and sliced sausage. Sear sausage slices for 2-3 minutes or until browned. Using a slotted spoon remove and set aside.
Add onion, bell pepper, tomatoes, and salt. Stir and cook for about 4-5 minutes or until vegetables are soft. Add tomato paste and continue to cook while stirring for about 1-2 more minutes. Add potatoes and mix well.
Add enough water to cover potatoes. Cook for 20-25 minutes or until potatoes are tender. Add sausage back in and fresh chopped parsley, stir to combine and add additional salt if necessary.
