Paleo Sweet Potato Casserole

A delicious classic, this Paleo Sweet Potato casserole is the perfect side dish for the holidays, with simple and wholesome ingredients.

Paleo Sweet potato casserole is the new addition to our Thanksgiving menu. Originally from Romania, my family embraced all the traditional Thanksgiving dishes except for this one. The sweet potato casserole never made an appearance at our table durning the holidays, and I am not sure if it’s because it is somehwere in between a side dish and dessert or just foreign to my parents. As an adult however it has been brought over by my brother-in-law and I have fallen in love with it in the last few years. Although I have seen many different versions, this one is quite simple and at the same time perefect for anyone with a food sensistivity. It is naturally gluten-free, dairy-free, sugar free and of course Paleo! This Paleo Sweet Potato casserole is a Thanksgiving classic that is sure to be loved and enjoyed by the entire family

Paleo Sweet Potato Casserole

Servings 8

Ingredients
  

  • 4 red sweet potatoes, peeled and cubed
  • 1/2 cup unsweetened Nutpods
  • 1/4 cup ghee
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 eggs, beaten

Pecan Topping

  • 1 1/2 cups chopped pecans
  • 2 tbsp ghee
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon

Instructions
 

  • Place sweet potatoes in a large pot and cover with water. Cover and bring to a low boil over medium-high heat. Boil for 20 minutes or until potatoes are tender and can be easily pierced with a fork.
  • Drain and trasnfer potatoes to a large mixing bowl. Add Nutpods, ghee, maple syrup, vanilla, cinamon, and eggs. Mash with a potato masher or use a mixer and mix until smooth. You may add a little Nutpods if mmixture is too thick.
  • Place the sweet potato mash in a 9×13 baking dish and smooth with a spatula.
  • Start your oven and heat to 375 degrees. In a small mixing bowl mix pecans, ghee, maple syrup, vanilla, coconut sugar, and cinnamon. Sprinkle evenly over sweet potato mash. Cover and bake for 30 minutes at 375 degrees. Uncover and contine to bake for 15-20 more minutes watching the pecans.
