Place a large skillet over medium-high heat.
Add ground turkey to skillet and cook while breaking up with a wooden spoon until no longer pink.
Add onion, poblano pepper and cook until soft. Add fire roasted tomatoes and chilis. Stir in taco seasoning and mix well.
Add frozen cauliflower rice, mix, and continue to cook for another 4-5 minutes.
Top with fresh chopped cilantro and your favorite toppings. Enjoy!
