Slow Cooker Garlic Thyme Chicken Thighs

     

This recipe was inspired by a 40 garlic clove chicken recipe I regularly make.  This slow cooker garlich chicken thigh recipe an easy no-fuss dinner that can be easily accompanied by any side.  Perfect for those busy weeknights served with a side of veggies or salad.  I served mine with butternut squash noodles for a low-carb alternative.

Ingredients:

  • 1 tbsp olive oil
  • 1 tbsp ghee
  • 2 tsp sea salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 8-10 boneless, skinless chicken thighs
  • 15-20 whole garlic cloves, peeled
  • 1 medium yellow onion, chopped
  • 1 tsp. fresh thyme
  • 2 sprigs thyme

Directions:

Add olive oil and ghee to a heavy large skillet, over medium high heat.  

Season chicken thighs with salt, pepper, and paprika.  

Add to skillet and sear 2-3 minutes on both sides until browned, but not all the way cooked.

Add to slow cooker and sprinkle with thyme.

In the same pan, add onions and garlic and cook 2-3 minutes until soft, and add to slow cooker.  

Add thyme sprigs.

Cover and cook on low for 6-7 hours, or on high for 4-5 hours.

Serve with a side of your favorite veggies.
