I have made this slow cooker pork for years. It is a favorite in our house even for the picky ones. Its versatile and is delicious on rice bowls, in tacos, nachos, burritos, and even in scrambled eggs. This easy dish is incredibly juicy, melt in your mouth tender, and super flavorful from simmering all day with the spices and citrus. It only takes a few minutes of preparation and you have an amazing dinner on the table the entire family will love.
Ingredients
1 medium yellow onion, chopped
4-5 lb pork shoulder cut into 4 inch pieces
1 lime sliced
8 garlic cloves, roughly chopped
1/2 cup orange juice
2 tbs dry oregano
1 tbs chili powder
1 tbs. cumin
1 tbs paprika
1 tsp salt
1/2 tsp red pepper flakes
1/4 cup fresh cilantro chopped
Directions
Add chopped onion to the bottom of slow cooker.
Add pork shoulder.
Add sliced limes and chopped garlic.
In a small bowl or measuring cup mix orange juice, oregano, chili powder, cumin, paprika and red pepper flakes.
Pour over ingredients in slow cooker.
Add fresh chopped cilantro.
Cover and cook on low for 8-10 hours or on high for 4-5 hours.
Discard extra liquid with a spoon or ladle.
Shred pork and serve with rice and favorite toppings.
