This dish reminds me of going to Disneyland with my babies. Every time we go to Disneyland and get out of the car, the girls are hungry. Before we get in the parks, we stop at the Ralph Brennans’ To-Go Jazz Kitchen which is a small quick and fast version of the restaurant and I always get myself the gumbo. This slow cooker Cajun Chicken and Sausage reminds me of that dish. It is a little lighter, easier, but just as flavorful. You chop and throw in the sausage, onions, celery, garlic, and peppers. Add the tomatoes, spices, and nestle the chicken in. Then you set it and forget it. Your house will smell incredible. I serve this crockpot cajun chicken and sausage on brown rice, but my kids will only have it with white rice. You can also spice it up if you don’t have to worry about kids and add some jalapeños or serrano peppers instead of the green pepper.
Ingredients:
1 lb. boneless skinless chicken breasts
12 oz. Andouille sausage cut into rounds
1 medium yellow onion, chopped
1 green bell pepper, chopped
3 celery stalks, chopped
4 cloves chopped garlic
2 cups chicken broth
2 14.5oz cans diced tomatoes
1 14.5oz can tomato sauce
3 tbs. tomato paste
1 tbs. cajun seasoning
1/4 tsp. cayenne pepper
Directions:
- Place sausage, onions, peppers, celery, garlic in the slow cooker.
- Add chicken broth, tomatoes, and seasonings and stir.
- Add chicken breast.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Take chicken breast out, shred, and place it back in the slow cooker.
- Mix well and serve over rice.
