This homemade Simple Chicken Noodle Soup is incredibly easy to make, packed with veggies and so much flavor, perfect on cool days and when feeling under the weather.

My family loves this simple Chicken Noodle Soup. It is my go-to soup when it’s cool outside or when someone is feeling ounder the weather. I love that it is truly simple and love by even my pickiest of eaters. Tender chicken, carrots, celery and noodles are the ultimate comfort in a bowl. Easily made gluten free by swapping out the regular noodles with gluten-free noodles. I have found that the best gluten free pasta for this recipe is the Barilla Rotini or Jovial Rotini as they hold their shape the best.
Ingredients I use to make Simple Chicken Noodle Soup
- chicken breast
- onion
- celery
- carrots
- bay leaves
- chicken broth
- turmeric
- noodles or gluten-free pasta
- fresh parsley

Simple Chicken Noodle Soup
Ingredients
- 2 boneless, skinless chicken breasts
- 4 celery stalks, diced
- 1 whole yellow onion, peeled
- 4 carrots, peeled, and cut into chunks
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp pepper
- 12 cups chicken broth
- 12 oz egg noodles
- 1/2 cup fresh parsley, chopped
Instructions
- Set a large soup pot or dutch oven on the stove over medium high heat. Add chicken breasts, whole onion, celery, carrots, bay leaves, turmeric, salt, and pepper.
- Pour chicken broth over all ingredients. Bring to a boil, then cover and simmer for 45 mins. Uncover, remove chicken from the pot and dice or shred. Take out onion and bay leaves and discard.
- Bring soup to a boil, add noodles, and cook for about 7-8 minutes or until noodles are tender. Add chicken back into the soup, taste and add more salt and pepper if needed. Top with fresh parsley and serve.
For gluten-free option:
- Cook gluten-free pasta (Barilla Rotini or Jovial Rotini are my favorite) separately and add to the pot together with the parsley.
