Hi! Let me just say that if you are short on time, have picky eaters, and want an easy one-pot meal, then look no further because this is it. You can prep this crockpot potato sausage meal in a few minutes and have a delicious dinner in no time. Put the potatoes and the sausage in the crockpot, top with onions, tomatoes, pepper, and set it and forget it.
Ingredients:
2 lbs whole baby potatoes
2 tbs olive oil
16 oz. fully-cooked chicken sausage, sliced in 1 inch chunks
1 small yellow onion, sliced
1 yellow banana pepper, sliced
1 Roma tomato, quartered and sliced
1/4 cup fresh parsley, chopped
1/2 cup broth
Directions:
Place baby potatoes in slow cooker and drizzle with olive oil.
Toss well.
Add sausage.
Top with onion and pepper slices.
Add tomatoes and broth.
Cover and cook on high for 4-6 hours or on low for 8-10, or until potatoes are tender.
Add fresh chopped parsley and stir.
Enjoy this easy, fuss free dinner.

Instead of precooked sausage, could you use fresh pork or fresh chicken sausage? I would consider partially cooking the sausage first to render some of the fat.

How do u cook the sausage
You don’t put any water in it or broth? It looks delicious and am trying it today.
You can add 1/2 cup of water to the bottom. I did not and everything cooked fine.

I didn’t have 4 hours. So I half way cooked the potatoes and putting it all in for 2 hours. I hope it turns out ok. 🙂
