Roasted Potatoes and Carrots
Easy and simple, these roasted potatoes and carrots are the perfect side to any dish.
- 2 lbs baby gold potatoes, halved
- 2 lbs carrots, peeled and cut into 1 inch pieces
- 1/3 cup extra-virgin olive oil
- 3 tsp salt
- 2 tsp garlic powder
- 1/2 tsp ground black pepper
- 2 Tbsp fresh parsley, chopped
Preheat oven to 400 degress Farhrenheit and spray a baking sheet with cooking spray.
Add potatoes and carrots to large mixing bowl. Add oil, salt, garlic powder, pepper, and mix well.
Pour the potatoes and carrots to sheet pan and spreas so that they are in a single even layer.
Bake for 35-40 minutes or until tender. Sprinkle with fresh chopped parsley and enjoy.
