Roasted Potatoes and Carrots

Easy and simple, these roasted potatoes and carrots are the perfect side to any dish.

Ingredients
  

  • 2 lbs baby gold potatoes, halved
  • 2 lbs carrots, peeled and cut into 1 inch pieces
  • 1/3 cup extra-virgin olive oil
  • 3 tsp salt
  • 2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 2 Tbsp fresh parsley, chopped

Instructions
 

  • Preheat oven to 400 degress Farhrenheit and spray a baking sheet with cooking spray.
  • Add potatoes and carrots to large mixing bowl. Add oil, salt, garlic powder, pepper, and mix well.
  • Pour the potatoes and carrots to sheet pan and spreas so that they are in a single even layer.
  • Bake for 35-40 minutes or until tender. Sprinkle with fresh chopped parsley and enjoy.
