Set a medium skillet over medium high heat. Add onion and garlic and saute in until soft about 5-6 minutes. Add tomato paste and stir well for another 1-2 minutes. Set onion mixture to the side.
In a large bowl add turkey, tomato mixture, salt, pepper, almond flour, eggs, and parsley. Mix all ingredients well.
Shape the meatloaf in a rectangular oval shape and place on a baking sheet covered in parchment paper. Top with tomato sauce topping. Bake for 1 hour at 350. Slice and serve with extra tomato sauce topping if desired and fresh chopped parsley.
