Turkey Meatloaf (Whole-30, Paleo, Gluten-Free)

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 large yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 lbs lean ground turkey
  • 2 tsp salt
  • 1 tsp pepper
  • 1 cup almond flour
  • 2 eggs
  • 1/4 cup fresh parsley, chopped

For the Sauce

  • 1 8oz can tomato sauce
  • 1 tbsp coconut aminos
  • 1 tsp garlic powder

Instructions
 

  • Set a medium skillet over medium high heat. Add onion and garlic and saute in until soft about 5-6 minutes. Add tomato paste and stir well for another 1-2 minutes. Set onion mixture to the side.
  • In a large bowl add turkey, tomato mixture, salt, pepper, almond flour, eggs, and parsley. Mix all ingredients well.
  • Shape the meatloaf in a rectangular oval shape and place on a baking sheet covered in parchment paper. Top with tomato sauce topping. Bake for 1 hour at 350. Slice and serve with extra tomato sauce topping if desired and fresh chopped parsley.
