Sausage and Braised Cabbage (Whole 30, Paleo)
This Sausage and Braised Cabbage is a classic Romanian dish that is low-carb, healthy, delicious, and the perfect weeknight one-pot meal.

- 2 tbsp avocado oil or extra virgin olive oil
- 1 lb chicken sausage, sliced
- 1 large yellow onion, chopped
- 1 tbsp paprika
- 1 large white cabbage, shredded or thinly sliced
- 8 oz can tomato sauce
- 1 /2 cup chicken broth or water
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup fresh parsley, chopped
Add oil to a large pot over medium high heat. Add sliced sausage and cook for 4-5 minutes until browned.
Take out sausage and set aside on a plate. Add chopped onion and sauté until soft for about 4-5 minutes. Add paprika and stir well.
Add the shredded cabbage, stir well to combine with the onion and cook for about 5 minutes. Add the tomato sauce, salt, pepper, broth or water, the cooked sausage and the bay leaf. Stir well, cover and cook for 15-20 minutes over medium-low heat stirring halfway through.
Uncover and add more salt and pepper if needed. Stir and continue to cook for about 5 more minutes or until most of the liquid has evaporated. Sprinkle with fresh chopped parsley and serve.
